It's called selective colorization. I've done a lot of rugby and cricket photos that way and framed it (10 photos in a frame)...looks awesome

you could do it with Photoshop - make the entire picture black and white, then paste the colour layer over the top and erase everything but the player...

I use software called "The Gimp". It is free to download from their official site: http://www.gimp.org
There is also manuals to download, very easy to use if you follow the manual.
My first photo took about 30-40min to do, as I followed the manual - my 2nd photo took less than 10 min.
